We headed to Italy on February 15 for our second Pippin Kitchen cooking class! Everyone got their hands dirty rolling out homemade pizza dough and sprinkling on tons of yummy toppings.  Our wood burning oven was fired up and ready for the evening – with temperatures topping 500 degrees Fahrenheit, each pizza takes only moments to cook through.

Make your own pizza dough at home with Amalia’s easy recipe:

1 1/2 teaspoon dried yeast                                      1/2 teaspoon Kosher salt

1/2 cup warm water, plus 1/4 cup                         Extra Virgin Olive Oil

2 cups 00 tipo Italian flour

Preheat oven to 500 degrees and place a pizza stone on the center rack

In a 2-cup glass cup, dissolve the yeast in the warm water, stirring with a fork.  Add 1/4 cup flour and stir with a fork (will be lumpy). Cover with a kitchen towel and let rise somewhere wram for 30 minutes  It should bubble and double in size.

In a large bowl, combine remaining 1 3/4 cup flour and salt.  Add the yeast mixture and remaining water to the flour and mix with a wooden spoon until the dough forms around the spoon.  Drop onto a lightly floured workspace and knead for 10-12 minutes until elastic.

Place dough ball into a large bowl with EVOO covering the sides. Put plastic wrap over the dough and let rise until doubled in size (1 hour). Flip the bowl upside down onto your workspace and punch the dough down.  Divide into two parts and roll into balls.  Shape into (2) 10-inch pizzas and cover with toppings of your choice. Bake until golden brown.
