Honey Shallot Dressing

¼ Cup Red Wine Vinegar
3 Tbsp Lemon Juice
3 Cloves Garlic
1 Shallot, Minced
1 Tbsp Local Honey
1 tsp Dijon Mustard
¼ Cup Extra Virgin Olive Oil
¼ Cup Grapeseed Oil Salt & Pepper
In a small mixing bowl, combine the red wine vinegar, honey, shallot, mustard, garlic, and lemon juice together. Briefly mix together with a whisk.
While keeping the bowl stationary, slowly drizzle in the extra virgin olive and grapeseed oil. Start with a few drops at a time then increase up to a steady stream.
Taste and add more honey or lemon juice as needed. Use this to dress your favorite green salad.
