This Green Smoothie Bowl uses fresh leafy greens and fruit from the Kitchen Garden at Pippin Hill. After a simple blend in the food processor, top the bowls with your favorite toppings like fresh fruit, chia seeds, and granola.
In the summertime, nothing beats a bowl of fresh fruit. One of my fondest memories as a kid is sitting down to enjoy a big bowl of sweet strawberries or grapes with my sister, freshly washed by my dad; sometimes he’d even mix a little bit of sugar into a bowl! Okay, so I still enjoy sharing a bowl of fruit with my family. And we only add sugar some of the time…
Preparing this Green Smoothie Bowl is like a grown-up, fancier version of fruit-in-a-bowl. It’s packed with the vitamins and nutrients you need for a healthy breakfast, or even a snack during the day. The best part? The leafy greens and strawberries were harvested from Pippin Hill’s gardens.
Fresh Produce From the Gardens
Spending an afternoon with certified horticulturist, Diane Burns, was such a treat. I’ve shopped at the farmer’s market for produce before, but going – literally, walking – right to the source of the Green Smoothie Bowl ingredients helped me understand more about why local, organic, and sustainable resources are important for our health and community.
Our first stop was by the spinach. We harvested a delicious amount, and I couldn’t wait to get them washed and ready for the smoothie bowls.
After harvesting spinach, we moved along to the Siberian Kale and Mara Des Bois strawberries. I tried a couple of the strawberries fresh right then and there, and couldn’t believe how small yet mighty (sweet) they were!
Green Smoothie Bowl Recipe
To prepare this easy dish, all you need is a high-powered food processor and some fresh produce. Top the smoothie bowls with your favorite toppings and you’re good to go!
1 banana, frozen
1 cup plain Greek yogurt
2 cups frozen pineapple
2 tablespoon chia seeds
Up to 8 oz. unsweetened vanilla almond milk
Handful of strawberries
2 cups packed mix of Siberian Kale and spinach
Squeeze from one wedge of lime
Toppings (optional): unsweetened shredded coconut, sliced fresh banana, chia seeds, fresh strawberries, your favorite granola
Directions: In a high-powered food processor, blend all ingredients. Transfer smoothie mixture into two bowls and top with desired toppings. Serve immediately.
